New Recipe with meatballs

As I had said previously, one of my new year's resolutions is to share some recipes with you all.

A while ago I didn't know what to cook so just looked around the fridge & the cupboards to see if I can find anything useful.  To be honest this usually happens towards the end of the week when another shopping trip to the supermarket is due. That's how i come up with various recipes :)

What I had was:

Fresh beef meatballs
baby hot-dogs
mushrooms
couscous


So I made this dinner & hubby really loved it.
I started by shallow frying the meatballs, then added one small sliced onion and the hot dogs. Then added mushrooms, salt & pepper. Then added some dry herbs such as thyme, oregano & basil. Then added a can of chopped tomato & some tomato purée.  Then made some couscous & when the meatballs where cooked added the couscous to the same pan for five minutes.   I then served it with tortilla bread & some olives mixed with feta cheese.  It was yummy : ) I suppose you could have it with any pickles or a side salad. 
It also goes with a glass of red or white wine.

  1. That sounds great Lily! Some of the best recipes are made when we are low on ingrediants, lol. The olives and fets cheese look good too, hmmmm. I love olives!
